சிக்கன் 65-க்கு ஏன் அந்தப் பெயர் வந்தது தெரியுமா?

சிக்கன் 65 நிறைய பேரோட ஃபேவரிட் டிஷ்.. இதுக்கு ஏன் அந்தப் பெயர் வந்தது தெரியுமா? இப்படி ஒரு செம டிஷ்ஷை கண்டுபிடிச்ச புகாரி ஹோட்டலோட வரலாறு என்ன? எடிசன் பல்பு கண்டுபிடிக்குறதுக்கு முன்னாடி ஆயிரம் முறை எக்ஸ்பெரிமெண்ட் தப்பானதா ஒரு கதை இருக்கு. இங்க ஒருத்தர் பிரியாணிக்காக 200 எக்ஸ்பெரிமெண்ட் பண்ணிருக்காருனு சொன்னா நம்ப முடியுதா?

1910 வது வருடம் திருநெல்வேலியில் பிறந்த ஏ.எம். புகாரி பிழைப்புக்காக தன்னுடைய 10 வயதில் இலங்கைக்குக் கிளம்புகிறார். அங்கயே சின்ன சின்ன வேலைகள் செய்து படிக்கவும் செய்கிறார். ஒரு கட்டத்திற்கு பிறகு சமைப்பதில் தனக்கு இருக்கும் ஆர்வத்தைத் தெரிந்துகொண்ட அவர் இலங்கையின் தலைநகர் கொழும்புவில் ‘ஹோட்டல் டி புகாரி’ என்ற உணவகம் தொடங்கினார். இது போன்ற ஒரு உணவகத்தை நம்ம நாட்டிலேயே தொடங்கினால் என்ன என்று அவருக்கு ஆசை வர, 1951 ஆம் ஆண்டு மெட்ராஸில் ஒரு ஹோட்டல் தொடங்குகிறார். மௌண்ட் ரோடில் அவர் தொடங்கிய புகாரி ஹோட்டல் இன்று வரை சென்னையின் அடையாளமாக நிற்கிறது.

சுதந்திரத்திற்குப் பிறகு இந்தியாவில் தொடங்கப்பட்ட முதல் Fine Dining Restaurant ஆக இது இருந்தது. லண்டன் ஸ்டைல் ரெஸ்டாரண்ட் உள்ளே இந்திய உணவுகள் என்ற கான்சப்டில் ஆரம்பித்தார் புகாரி. காசு போட்டு பாடல் கேட்கும் இயந்திரமான ஜூக் பாக்ஸ், காபி தயாரிக்கும் இயந்திரம் என அப்போது நவீனமாக இருந்த பல விஷயங்களை அறிமுகப்படுத்தினார். 60-70களில் இந்த ஹோட்டல் மிகவும் பிரபலமாக இருந்தது. எம்.ஜி.ஆருக்கு இந்த ஹோட்டலின் சிக்கன் சூப்பும், கசாட்டா ஐஸ்கிரீமும் ரொம்ப பிடிக்குமாம். இங்கிருந்து அவர் வீட்டுக்கு பார்சல் போகும். ஒரு சிறப்பான புகாரி ஸ்பெஷல் பிரியாணி கொண்டு வர விரும்பிய புகாரி வெவ்வேறு உணவுப் பொருட்களை வைத்து எக்ஸ்பெரிமெண்ட் செய்து கிட்டத்தட்ட 200 வகையான பிரியாணிக்கு பிறகு ஒரு ரெசிப்பியை கண்டுபிடித்தார். அப்படி அவர் கண்டறிந்த அந்த ரெசிப்பிதான் இன்று வரை புகாரி பிரியாணியின் ரெசிப்பியாக இருக்கிறது. தன்னுடைய உணவகத்தில் புதிது புதிதாக உணவு வகைகளை அறிமுகப்படுத்த விரும்பினார். அப்படி அவர் அறிமுகப்படுத்திய இன்னொரு டிஷ் சிக்கன் 65.

இந்த சிக்கன் 65-க்கு ஏன் இந்தப் பெயர் வந்தது என்பது பற்றி நிறைய கருத்துகள் உண்டு. இது 65 நாள் கோழியை பதப்படுத்தி தயாரிப்பது, 65 வகையான மசாலாக்கள் சேர்த்து செய்யப்படுவது, 65 கிராம் இருக்கும் என்றெல்லாம் கதைகள் உண்டு. ஆனால் நிஜம் என்ன தெரியுமா?

1965 ஆம் ஆண்டு புத்தாண்டு தினத்தன்று ஸ்பெசல் டிஷ்ஷாக சிக்கன் வறுவலை  அறிமுகப்படுத்தினார் புஹாரி. அன்றைக்கு ரெஸ்டாரண்ட் வந்தவர்களுக்கு இது பிடித்துப் போக இதன் பெயர் கேட்டனர். அப்போது அவர் அந்த வருடத்தை வைத்து சொன்ன பெயர்தான் சிக்கன் – 65. பிறகு அந்தப் பெயர் பிரபலமடைந்து. இதேபோல சிக்கன் 78, சிக்கன் 82, சிக்கன் 90 என சில டிஷ்களை அறிமுகப்படுத்தியது புகாரி ஆனால் அது எதுவும் சிக்கன் 65 அளவிற்கு புகழ் பெறவில்லை.
